This sucker is my all-time fave quick bread, straight outta my mom's stash of fantabulous recipes. If you're wanting to try something new, this is an incredibly tasty and not-too-unhealthy excuse for breakfast. It's awesome at all seasons of the year, and it's so good you don't even need to spread butter on it!
BREAD INGREDIENTS:
-1 egg
-1 cup milk
-3 tbsp vegetable oil
-2 cups flour
-1 cup sugar
-2 1/2 tsp baking powder
-1/2 tsp salt
-2 cups fresh or frozen blueberries (if they're frozen, don't thaw them or it'll screw your life up)
TOPPINGaka "absolute mouth heaven"INGREDIENTS:
-1 cup flaked coconut
-1/2 cup firmly packed brown sugar
-2 tbsp butter (softened)
-1 tbsp all-purpose flour
1. GIT YO BUTTER OUTTA DA FRIDGE. If you don't keep your butter in the fridge, then just ignore this step.
2. Preheat oven to 350°.
3. Beat egg, milk, and oil.
4. In a separate bowl, combine flour, sugar, baking powder, and salt.(Yeah you actually put the sugar in the dry ingredients, it's weird)
5. Gradually add flour mixture to egg mixture, just until combined.
6. Fold in blueberries.
7. Grease loaf pan (bottom onlyor else your life will be ruined) and pour batter in.
8. In a separate small bowl, combine coconut, brown sugar, butter, and flour. Mix with fork until well blended.
9. Sprinkle topping over the batter in the loaf pan.
10. Bake for 50-55 minutes, until toothpick comes out clean.
11. Cool in pan 10 minutes before removing.
12. EAT IT
Side note: When I made this a few weeks ago, I used frozen blueberries and the bread wouldn't cook because of the added moisture, and so I had to bake the bread for about another half an hour (in small increments of course!) with aluminum foil on top to keep the topping from burning. With fresh blueberries (which I don't think really exist this time of year), you shouldn't have to worry about that. -
