You can find UBB codes underneath the post box. It's labeled "The following UBB codes are available:" in bold. You get to use different UBB codes depending on your level, so what you can use should be whatever shows up there. :)Moderator

why is it striped trough for everything

On mobile devices, the striped through will continue throughout the whole page if the end tag is not placed.
I don't think this is the case for bold or italic text, but I see it happen a lot on mobile devices.
I've placed the end tag for the slashed out text here, so hopefully it'll stop. -
