Is it kind weird that I'm super affectionate with my friends? Like, with my friends, I like to hold hands and hug and stuff. But at the same time, sometimes, especially if it's someone I don't know that well, I flinch away even if we just brush shoulders.

Same. It's probably because you're comfortable with your friends and you love them and you want to show it. With strangers you don't know them and we've been taught at a young age, 'stranger danger'.
