He was the big guy with a big axe on a narrow bridge. There was two archers on top of the tower you walk out of to fight him. That's the Taurus Demon.

How hard is he though? -
Pretty f---ing hard. His attacks have pretty outrageous hitboxes. But, on the bright side, there's an easy way to beat him if you have the right materials.
When you find the merchant, buy the key that allows you into the residants home. Use it on the locked door while making your way to the boss. Once done, open the chest in the back of the house and you'll get 3 gold pine resin. You'll need this, so don't waste it.
Once you've obtained the gold pine resin, make your way to the tower and pass through the white light. Before summoning the boss, there are two archers on top of the tower you came out of. Go up the ladder placed right next to the door and eliminate them.Then proceed to run towards the other side of the bridge until the boss shows its ugly head. Once that's done, bolt back to the other side of the bridge where the archers were at. (Make sure you have your gold pine resin applied to your weapon at this time.) Climb up the ladder and wait till the boss is below you. Plunge attack him, dealing a critical blow and massive damage to him. Then proceed to keep attacking with your lightning-infused weapon until he's dead.
