I have this recipe from allrecipes.com for an apple-cinnamon loaf cake. It's absolutely delicious! Very moist. My only two problems with this are the amount of cinnamon and the baking time. It just doesn't taste cinnamony enough to my taste, but that can be fixed quickly. More problematically, the baking time seems wayyyy off. I've made it twice now and baking it in my oven at 350 for 40 minutes did practically nothing; the batter was still soupy! I was on a time restraint so I turned my oven up to 450 and that did the trick. Did this both times I made it and it turned out great! Maybe it's my oven. Would definitely recommend this recipe, though.
