I honestly don't know, and I think it's rather stupid that we have either terms.

Maybe because colored people sounds more blunt? I don't really know.

possibly because "colored" was a term used to describe black people during the era of segregation?
Take this picture for example:
Where as "people of color" sounds more polite and isn't referring to black people only, if i say poc i could be talking about someone of middle eastern or spanish descent. -
