I don't like to eat things with raw egg in it, but I make special cookie dough that is egg-free and safe to eat as is. -

It's more dangerous to eat store bought cookie dough than homemade, because the eggs they used aren't as clean.
Honestly you don't need a whole new recipe, though. You just replace it with a quarter cup of water per egg. It keeps the proper consistency, and it doesn't take away from the flavor. -
