Without explanation, ask your mother the following question:
If you witnessed a robbery, but the perpetrator was wearing full body covering and disguised their voice, how would you describe them to the police?
If her response includes an instance of "they" or "them" used in a singular context, you've made your point. -

It's the easiest example I've been able to come up with. People that deny that they/them can be used in a singular context are generally being willfully ignorant- they've been using it all their lives. Not using it for a person to make them feel more comfortable in their own skin is just a matter of stubbornness.

Let me know how that works out for you. Don't tell her why you're asking- I've found that most people will make an effort not to use those pronouns in their answer if they know what point you're making.
