Multiple reasons, actually.
If I were do dive into actual character lore, one fact about Sunny is that they don't remember certain things, including most of their training to become a witch.
Another reason is that they can't exactly use wands in a world where that type of magic doesn't exist anymore. Magic isn't SUPPOSED to exist in their new world. Only in The Glitch Realm. But that's another story. -
