I've never seared fish
How does your stovetop measure the temperature? -

Like, Low Medium High, or does it do numbers, or both?

Low, medium, high

I usually put it in between medium and high, more on the high side. Make sure you add a bit of water every once in awhile so that it doesn't burn.

Is there anything else you do? How do you know when it's.. not raw anymore?

That's tough to answer. When I learned I had my mom come check it when I thought it might be done, but if I'm guessing correctly, you're at home by yourself?
What I would do, since you're just starting out is cut the biggest piece and see if it's pink in it. -

I can make basically any egg. I've been experimenting with them. Which is how I figured out that and omelet is just a scrambled egg that is fried on the whole pan.

It doesn't really matter which kind, but chicken breast is easier to cut, but it is more expensive, usually.
