Ok I'm not a huge fan of eggnog, but our friends made this for us one Christmas, and we just loved it so much that we got the recipe. Guys it's just so wonderfully rich and creamy 👌
This will make about a half gallon of eggnog.
Ingredients:
• 4 cups of skim milk
• 1/2 teaspoon of vanilla extract
• 5 whole cloves
• 1 teaspoon of cinnamon
• 1/2 teaspoon of nutmeg
• 12 egg yolks
• 1 1/2 cups of sugar
• 2 cups of heavy cream
• 2 cups of half and half
• 2 teaspoons of vanilla extract
Directions:
In a saucepan (big enough to hold about half a gallon of liquid), gently stir in the first 5 ingredients over low heat on the stove. (Tip: If the surface area of the pot/pan is bigger, it will heat up faster and save you time.) I use a whisk to stir everything. Keep stirring until the mixture starts to steam. You do NOT need to let the mixture boil. Once the mixture starts steaming, turn off the stove and let it sit while you move on to the next thing. The only thing you have to worry about in this step is to make sure the milk doesn't burn, which will happen if you don't stir it enough.
In a mixing bowl, whip together your egg yolks and sugar until the mixture is fluffy. I just use an electric mixture. If you don't have one of those...well then, your arm is going to have a workout. Just make sure you're only using the yolks and not the entire egg. It feels like a waste of eggs, yes, but it's worth it.
Slowly add in the milk mixture to the egg mixture. I let the electric mixer run as I slowly pour in the milk mixture. If you don't have an electric mixer, just pour in a little at a time, mix, pour in some more, and mix again. And just keep going. Go slow so that you don't end up accidentally cooking the eggs.
Grab a strainer. As your pour the entire mixture back into the pan on the stove, pour it through a strainer to get the cloves out. Stir this mixture on medium heat for about 3 minutes. It should start to thicken up. Then turn everything off and let it sit for an hour to cool down.
Now you can add in the remaining ingredients. Mix everything together then put it in the fridge! It's ready whenever you want it.
