Fiddleheads are young fern fronds and are harvested as vegetables in the Northern New England area of the U.S. I absolutely loved eating them when I lived up there... I miss them! They're so yummy with some salt and lemon. Or soy sauce and lemon. However you want, really. ;-;

This is what they look like out where they grow. You're suppose to pull any brown/loose stuff off of them, then wash them and cook them. And when harvesting these you have to wear clothes that seal off your skin because of ticks. And do tick checks when you get home, just in case.
